I search “cheap dinner recipes” on Pinterest all the time. I can follow a recipe but I am no gourmet chef. I also hate recipes that I have to buy 14 spices and other ingredients. I do not want to spend $60 at the grocery store for one recipe. I live alone so it is hard to find cheap, easy, and delicious recipes for one. I try to find recipes that make good leftovers (or I end up feeding my boyfriend). I’ve pinned many recipes but these are my current favorites.
Skinnytaste Chicken Parmesan
This is SO easy and delicious. I make this pretty often. You can serve it over pasta or zoodles (if you are trying to be healthy). Since it is baked it is healthier for you. It also makes amazing leftovers. Tastes just as good the next day! I love skinnytaste recipes because she puts how many calories and smart points. This recipe is 5 smart points and 251 calories per serving.

Easy Chicken Tacos
I found this recipe and while ago but seriously these are so easy to max. It is also 21 day fix approved. Two taco shells, 1 cup of the chicken mixture, 1/4 cup of cheese, 1/2 cup of shredded lettuce is ONE serving and equals 1 Red, 1 Yellow, 1 green and 1 blue. Instead of getting a can of diced chiles and a can of diced tomatoes I usually just get a can of Rotel (so yummy!). I also add guacamole because guacamole makes everything 100x better.

One Pan Chicken, Green Beans, Potatoes
This is great for leftovers or if you are feeding multiple people (for me that means my boyfriend). One pan so you don’t need to do a ton of dishes (my favorite part) and it is only five ingredients. It takes less than 10 minutes to prep and takes an hour to cook. You can switch out the green beans and potatoes for any other vegetables you want to include. I’ve switched out the green beans for asparagus.

BBQ Chicken Bake
This is the easiest BBQ chicken bake I found. I usually make it with some veggie (green beans) and potatoes (either mashed potatoes or some red potato side dish). Y’all, this is four ingredients. It really is so simple. You only use one dish so it is also super easy to clean up.

Chrissy Teigen Chicken Lettuce Wraps
These are definitely the best lettuce wraps I’ve had. This does include a few extra ingredients but you might have them in your house. If not it is totally worth getting them for this recipe. I ate way more than a serving size but they are so delicious! Also, it’s Chrissy Teigen’s recipe so obviously it’s perfect.

Chicken & Asparagus Lemon Stir Fry
This is the first recipe that got me hooked to skinnytaste (I have both her cookbooks now). Her recipes are healthy, easy and taste so good! This is a great recipe if you are craving stir fry but want to be healthy. You can also swap out the asparagus for green beans if you aren’t a fan of asparagus. I usually serve this over brown rice.

Crockpot BBQ Shredded Chicken
I recently found this recipe and I LOVE it. You can use the shredded chicken for a salad, on a rolls, or in a wrap. It makes a ton and makes great leftovers for other recipes. It is 5 ingredients and a few you might even have in your house right now.
